**200 micron is a coarse filter, with holes similar in size to a window screen. Most pollen grains are around 25 microns. The largest pollen grains are 200 microns. On the microscopic level, pollen is generally very large, so everything else is also kept in the honey and not filtered out.
A more fine filter would remove some of the flavor profile. If we used a 1 micron filter it would remove all particles similar in size to yeast. If we used a 0.5 micron it would remove all smaller particles the size of bacteria.
We use 200 micron to remove the chunks of wax and other debris, while retaining pollen and other beneficial components. Otherwise it would be chunky honey. This is considered unfiltered, as a filtered honey would have used a 2 micron filter (or similar), which extends the shelf life. This filter has 100 times larger holes.
